Cheese Bread - Soft Fluffy Delicious

250g (2 cups) of all-purpose flour
1 tsp instant yeast
1 tsp sugar
125ml (1/2 cup) of warm milk
1 egg, whipped.
1 sprig spring onion, chopped.
3 tbsp butter, melted.
1 tsp salt
Shredded cheese(s) for filling and topping

2 tbsp of butter, melted (for polish the dough)

  1. In a mixing bowl, mix all the ingredients except the cheeses and 2 tbsp of butter.
  2. Mix the dough until smooth. It should be very soft and sticky. Cover for 90 minutes.
  3. Use flour to handle the sticky dough. Form a ball and divide into 12 pieces.
  4. Make into small balls. Flatten the dough into an oval.
  5. Fill with shredded cheese. I use mozzarella as filling.
  6. Fold the dough from the short sides to the middle. 
  7. Grease the baking pan with butter. The pan size I used is 23 x 11 x 4 cms. Polish every side of the dough with melted butter. 
  8. Put the dough in the baking pan the folded side at the bottom. Repeat the process until finished.
  9. Polish the top with the remaining butter. Cover for 30 minutes.
  10. Apply the egg (optional). Shredded cheese on top (Emmenthal, Cheddar, or other cheese).
  11. Bake at 180°C preheated oven, for 30 minutes. If the bottom still soft, bake again use lower heat for 10 minutes.
