Star Bread - Purple Sweet Potato Bread

Filling:

2 medium purple sweet potatoes, steamed/boiled/baked.
1 tbsp unsalted butter + 1 tsp vanilla sugar
2 tbsp sugar/brown sugar or more if you like sweeter.

Mash cooked purple sweet potatoes until smooth. Add butter, vanilla, and sugar. Mix well and set aside until ready to use.

Dough:

250g (2 cups) all-purpose flour
1 tsp instant dry yeast
1 tbsp sugar
3 tbsp melted butter
1 large egg, beaten.
125ml (1/2 cup) warm milk
1/2 tsp salt
1 egg yolk to apply before baking (egg wash)

In a mixing bowl, put all the dough ingredients (except egg yolk). 
Stir into a rough dough and place on a floured countertop. 
Knead until smooth, sprinkle with a little flour if necessary.
Shape into a ball, divide into 6 pieces. Make 6 balls.
Flatten each dough as thin as you can.
Place one thin dough on a baking tray, spread evenly 1/5 part of the filling on the dough.
Stack the next dough, and repeat the process until the finish, total 6 layers. Smooth the surface.
Trim the excess dough on the sides. Use a ring border in the center of the dough.
Make 16 slices around it.
Start to twisting with two slices to the opposite sides. Cover to proof for 30 minutes.
Apply egg yolk. Bake for 25 minutes at 180°C preheated an oven, until golden.

The taste is little sweet, please add sugar if you like sweet bread. The texture is soft and fluffy.
