Vegetable Cheese Pie - Lockdown Recipe

3 - 4 large eggs
1.5 tsp salt, pepper, chili, garlic, to taste.
250ml (1 cup) milk
Onion, tomato, spring onion, paprika, mushrooms, spinach, etc.
1 cup mozzarella cheese
250g all-purpose flour
2 tbsp baking powder
1/2 cup oil/melted butter (I didn't use it)
2 large potatoes, roughly grated and squeezed
Grated mozzarella cheese for topping

Pan size I use: 28.5 x 23 x 4 cm
Baking temp: 200°C
Baking time 30 minutes
The seasoning is flexible, follow your taste.
  1. Preheat oven at 200°C. Prepared the pan, use parchment paper, or grease your pan with butter. 
  2. In mixing bowl: whisk eggs and seasonings until well blended. Add milk, continue whisking.
  3. Add vegetables of your choice (and meat/chicken/sausage) if using.
  4. Add the mozzarella cheese (grated or fresh).
  5. Add half of the flour, mix well. Ad the remaining four and baking powder. Mix well slowly.
  6. You can use 1/2 cup of oil/melted butter if you want.
  7. In a prepared pan, spread grated potatoes evenly. Pour the vegetable mixture on top.
  8. Spread evenly and add grated mozzarella cheese on top. The more the better.
  9. Bake for 30 minutes at 200°C until golden brown and cooked through.
  10. Serve warm/hot.
